- Kuttu Ki Roti (Buckwheat Flatbread): Sawan is a popular Hindu sacred month that also involves fasting and torts. A common preparation consumed during the period is Kuttu ki Roti. This flatbread is prepared from buckwheat flour which is, in fact, gluten-free and has the potential of nourishing the body. Kuttu ka atta with mashed potatoes, rock salt (sendha namak) and water to make soft dough. You’ll form it into rotis and had on hot griddle with a spoonful of ghee. It is best served hot and accompanied by yogurt or green chutney.

2. Aloo Ki Sabzi (Potato Curry): Aloo Ki Sabzi is a very basic preparation of potatoes and they go very well with Kuttu ki Roti. First, heat the ghee or oil in a saucepan and fry the cumin seeds, finely chopped green chilies, and curry leaves until they splutter. Now add the soaked sabudana along with crushed peanuts and rock salt in it. They must be cooked until the sabudana becomes slightly transparent. Serve with a dash of fresh lemon juice and chopped coriander.

4. Lauki Ki Sabzi (Bottle Gourd Curry): Lauki Ki Sabzi is prepared from simple raw materials and does not contain any rich or heavy items that are unfit for Sawan. To prepare raw bottle gourd and other vegetables, please peel and chop the bottle gourd into small pieces. In a pan, melt ghee and then add cumin seeds and grated ginger and get them roasted before adding the bottle gourd. Gently, cook with rock salt and a pinch of turmeric until it becomes tender. Fry the water chestnut flour (singhare ka atta) in ghee until the colour changes to a reddish brown.
