1.Healthy Wrap
Ingredients:
¾ cup mixed sprouts (green moong sprouts and moth beans sprouts), boiled and mashed
4 ready-made whole wheat rotis
1 large sweet potato, boiled, peeled, and grated
1 small onion, chopped
½ tsp chopped garlic
½ tsp chopped ginger
2 tbsps chopped fresh coriander leaves
½ tsp chaat masala
1 tbsp corn flour
¼ tsp turmeric powder
2-3 green chillies, chopped
1 tbsp blanched spinach puree
½ tsp red chilli powder
Salt to taste
Oil for shallow frying
Rajma humus for applying
Toppings:
Iceberg lettuce leaves
Pickled carrot
Pickled white radish
Pickled English cucumber
Pickled beetroot
Pickled gherkins
Crushed black peppercorn to taste
To Serve:
Salad
Method:
l Mix sprouts, sweet potato, onion, garlic, ginger, coriander leaves, chaat masala, corn flour, turmeric powder, green chillies, spinach puree, red chilli powder, and salt.
l Shape into tikkis and shallow fry until golden brown.
l Make wraps with whole wheat roti, rajma hummus, lettuce, tikkis, and assorted pickled vegetables.
l Serve with a side of salad.
2.Soya Kebab
Ingredients:
Soya chunks – 1 cup
Onion, mint, green chilli, coriander seeds, sattu, boiled and mashed potato, coriander, cumin, turmeric, chilly powder, garam masala, mustard oil, ginger, chaat masala, salt
Oil for drizzling
Method:
l Soak soya chunks, blend with other ingredients, and form small kebabs.
l Shallow fry until brown on both sides.
l Serve hot.
3.Oil-Free Chole
Ingredients:
Chickpeas
Green cardamom, black peppercorns, cloves, black cardamom, cinnamon stick, garlic, ginger, ajwain, water, black tea concoction, baking soda, roasted besan, coriander powder, red chilli powder, jeera powder, green chillies, homemade chana masala, aamchur powder, anardana powder, kasuri methi
Method:
l Soak chickpeas and cook with spices and black tea concoction.
l Add roasted besan, and remaining spices, and cook.
l Your oil-free chole is ready to be served.

4.Kabuli Chana Biryani
Ingredients:
Cooked brown rice, chopped coriander, saffron strands, warm low-fat milk, salt
Soaked and boiled kabuli chana
Oil, ginger paste, garlic paste, chilli powder, turmeric powder, tomatoes, green chillies, salt, whisked low-fat curds
Method:
l Prepare kabuli chana gravy.
l Mix saffron with milk and combine with rice, coriander, and salt.
l Layer rice and kabuli chana gravy, then bake.
l Serve hot.

5.Diet Chaat
Ingredients:
Dried white peas, turmeric powder, asafoetida, onion, tomato, green chutney, date and tamarind chutney, red chilli-garlic chutney, raw mango, lemon, black salt, chaat masala, roasted cumin powder, chilled yoghurt, fresh coriander
Method:
l Cook white peas with spices.
l Assemble the chaat with chopped vegetables, chutneys, and spices.
l Serve immediately.
