Ingredients to prepare Mutton chukka-
Mutton – it is better to use tender cuts for this recipe of lamb or mutton pieces. According to the taste desired, it is better to use boneless mutton and some with bones intact. Cook the mutton separately using the following spices and ground masalas and cook till they are tender. It is generally preferred that mutton should take about 5 to 6 whistle in pressure cooker to get cooked.
Onion – sliced onions is used for spluttering in the end. For preparing the masala, peeled shallots are used in the process.
Ginger & Garlic – lots of ginger garlic is used in the marination. Actually you can use both whole peeled and crushed garlic when one is tempering curry leaves.
Spices – For the marination, use dry red chillies and red chilli powder.
Curry leaves – It is good to use about 5 curry leaves when tempering. It makes the dish so yummy and tasty.
Masalas – dry powders and seeds like fennel seeds are used as grinding agents.
Roasted Gram Dal – A pinch of powdered roasted gram dal is added at the end to provide the dry sukka finish

How to make Mutton chukka?
Blend finely crushed red chilies, fennel seeds, ginger and garlic, shallots, garam masala powder.In Now mix mutton with required salt, turmeric, lemon juice required for marination.
If you are using a pressure cooker, put it in the appropriate pressure and cook for 5 minutes.
Saute the curry leaves and sliced onions in coconut oil then add on the cooked mutton along with any leftovers. To this add the roasted gram dal powder and roast for 10 minutes on low flame. Finally add chopped tamarind leaves, coriander leaves pepper powder and lemon juice. Serve hot.
