1.Oats Dhokla
Stuff you need:
50 grams Oats Flour
200 grams Gram Flour
1 cup Yogurt
1 tablespoon Sugar
1½ teaspoons Baking soda
1½ teaspoons Citric acid
5-6 tablespoons Rice bran oil (+ some more for greasing)
½ teaspoon Asafoetida
1½ teaspoons Mustard seeds
3-4 Green chilies (Cut up)
16-20 Curry leaves
4 tablespoons Sugar
Method:
Mix chickpea flour, oat flour, plain yogurt, sugar, baking soda, and citric acid in a bowl. Stir well with enough water until smooth. Stir in 3-4 spoons of rice bran oil. Boil water in a steamer. Oil the dhokla trays. Pour mix into trays and steam for 15-20 mins. In a small pot, warm oil. Add asafoetida, mustard seeds, green chilies, and curry leaves. Spread this over the cooked dhokla. Boil sugar with water to make a sweet mix. Pour this over the dhokla and let it soak in. Cut into squares to serve.
2.Healthy Egg Rolls
Stuff you need:
4 Eggs
Dough made from 1 1/2 cups of whole wheat flour
1 Medium cucumber (skinned)
2 Green chilies (cut small)
2 spoons Vinegar
Whole wheat flour (for rolling)
1 Large onion (cut in rings)
Salt (as needed)
Chaat masala (to taste)
Oil (for cooking)
2 spoons Red chili sauce
2 spoons Tomato sauce
Method
Cut cucumber into long pieces and make chili vinegar by mixing green chilies and vinegar. Split dough and roll out each piece into a big round flatbread. Cook flatbreads on a pan. Beat egg whites with salt. Cook egg whites in the pan, put flatbread on top, add more egg whites, and cook till ready. Place onions, cucumber, chaat masala, chili sauce, ketchup, and chilli vinegar on the roti. Roll tightly and serve.
3.Veggie Rice
Ingredients:
8-10 Cauliflower bits
5-6 Green beans (cut)
2 Carrots (cut)
1/4 cup Peas
1 1/2 cups Rice (soaked)
1 spoon Butter
1 spoon Cumin
4-5 Pepper balls
3-4 Cardamom pods
3-4 Cloves
2 Bay leafs
2 Green peppers (split)
Salt (as needed)
Method:
Warm butter in a pan, add cumin, pepper, cardamom, cloves, and bay leaves. Cook.
Toss in veggies and cook more. Add rice and salt.
Pour in water, cover, and cook till rice is ready.
Serve hot, topped with fresh greens.
3.Fruit Dessert Pizza
Ingredients:
¼ cup Pineapple bits
10-12 Cherries (no pits, cut in half)
2 Plums (sliced thin)
1 Kiwi (peeled, sliced)
Pizza crust
Fruit spread
Cream cheese
White choco (shaved)

Method:
Heat oven to 392º F.
Spread jam and cream cheese on crust.
Lay fruits on top and bake for 10 mins.
Top with shaved choco, slice, and serve.
