Delicious Kaju Barfi Recipe You Must Try
Kaju Barfi, popularly called Kaju Katli, is one of the most famous Indian sweet for which cashew is chiefly used. The texture that is soft to touch with an oiled surface, the taste being very creamy and having a distinct nutty taste makes it relished most during festivals and occasions like these. Ingredients:
– 2 cups cashews
– 1 cup sugar
– 1/2 cup water
– A pinch of cinnamon and 1/4 tsp of roasted cardamom powder is added.
– In this context, one tablespoon ghee clarified butter is also used.
– Edible silver leaf depending on the occasion .

Instructions:
1. Preparation of Cashew Powder
The recipe, therefore, starts with processing the cashews to a fine paste. It is also advisable to pulse the cashews until you achieve your desired texture without overdoing it and reducing them to a paste-like consistency. In a case where lumps were formed knead the mixture until smooth then spoon it through a sieve to remove the lumps.
2. Making the Sugar Syrup:
To start with, heat the sugar and water in a saucepan with a thick base. Add this mixture to the stove, and cook at medium flame until the sugar has entirely dissolved and is one-string consistency. This means that as the spoon is dipped in the syrup and then lifted up, a thin string should hold from the spoon.
3. Mixing Cashew Powder:
Reduce the heat and slowly put the cashew powder to the sugar syrup while whisking the mixture in order to ensure that no lumps are formed. Add more ingredients to the mixture, and then let it cook over low heat until thick and starts to come off the sides of the pot.
4. Adding Flavor and Setting the Mixture
Put the cardamom powder and ghee to the mixture and let it cook for several seconds. Stir until combined and continue cooking for additional one minute. Finally, it is required to remove the pan from heat and allow the mixture to cool down for a few minutes.
5. Shaping the Barfi:
Transfer the mixture into another greased parchment paper. Place another smooth surface of parchment paper on top and use the rolling pin to flatten the dough until the thickness of your desired crust is achieved. It is advisable to let it cool for quite sometime before serving.
6. Cutting and Serving
Upon cooling the ganache coating begins to set, remove the top parchment paper and, if one wishes, replace the silver leaf. To garnish the Kaju Barfi, you must cut them into diamond shapes with the sharp edged knife.
