Thekua
Thekua is a regional recipe from Bihar. It sweetens our taste buds, especially during Chhath Puja. It is absolutely delectable and often seems like cookies. Let us take a look at the ingredients.
Ingredients
- Wheat flour- 2 cups (300gms)
- Jaggery- ¾ cup (150gms)
- Coconut Grated- ½ cup (50gms)
- Oil- to fry
- Ghee- 2 tbsp
- Cardamom- 5
Let us cook
To prepare Thekua, we need to dissolve jaggery into half a cup of water and put it on flame. Stir till you see jaggery fully dissolved in water. Stir the jaggery syrup to the remote to remove the impurities. Now, add ghee to this jaggery syrup. Let the jaggery syrup cool, meanwhile grind the cardamom. Just place the cardamom pods in a mortar and smash with a pestle to crack open the pods. You can also add dry fruits like Kaju (cashew), kishmish (raisins), chihuahua (dry dates) too.
The main dry fruits are cardamom and coconut powder. Add jaggery syrup little by little and make hard dough out of it. The dough should be dry and friable and not very soft and smooth. You can use less than half a cup of water to make the dough-making process easy. The quantity of water depends on the quality of the flour. If the flour is thick, we may need a little more water to make the dough.

For frying Thekua, Put the pan on the flame and add oil to the pan. Mold the thekua. You can use an artificial molder or also can break the dough into small balls and shape it using your palms.
We can make either disc-shaped or long ones. When you are ready with your favourite shapes of thekua, check whether the oil is hot or not. To fry thekuas, the oil should be medium hot.
Put one by one in the hot oil pan and flip it to make another side also cook till both the sides receive the nice golden brown colour. Cook it all and plate it for your Chhath puja bhog.
Rasiyav
Rasiyav is a popular Chhath puja desert and is also known as gud ki kheer.
Ingredients
- Rice- 1/2 cup (for fasting)
- Milk-1 liter
- Jaggery-150 grams
- Raisin-2 tsp (finely chopped)
- Almond- 2 tsp (finely chopped)
- Cashew-2 tsp (finely chopped)
- Cardamom powder-1 tsp
Let us cook
Firstly, break the Jaggery and chop dry fruits finely. Soak rice in water for 2 hours after washing them. Put the pot on the gas and pour some milk. When it starts boiling, add rice to it. Keep it stirring at a low flame. After some time add 2 spoons of jaggery and water and let them heat. After mixing kheer with jaggery , turn off the gas. Add some dry fruits and mix it again. Finally, filter the jaggery through a sieve and mingle it with kheer. Your Rasiyav is ready to serve.
Green Chana Masala
This delicacy does not involve many ingredients or special cooking skills.
Ingredients
- Green chickpeas- 1 cup
- Tomato- 1 (finely chopped)
- Chillies- 2 green
- Coriander powder- 1 tsp
- Cumin seeds- 1 tsp
- Ginger- 1 inch
- sendha namak
- Turmeric- 1 tsp
- Ghee- 2 tsp
- Coriander leaves- 1 tsp (chopped)
Let us cook
You have to just soak green chana overnight. Now in the preheated ghee add green chillies and cumin seeds. Add some grated ginger too. Allow the seeds to splutter. Add finely chopped tomato and sauté it at a low flame for at least 5 minutes.
Now, add turmeric and coriander power once the tomatoes start cooling. Add sendha namak before pouring green chana. Stir the mixture well and cover the pan with a lid. Allow it to cook for the next 5 minutes. Now, pour some water and cook it again on the low flame for another 10 minutes. Garnish it with coriander leaves.
