Aamras is a kind of Indian dessert made up of mangoes and is widely savored by people especially during summers. This rich and spicy mango pulp eating alone or with puris is suitable to provide the traditional feel or taste. Anyone who has eaten a ripe juicy mango must try making this aamras at home, and I am presenting the simplest recipe to you all.

4 fully ripe Alphonso Mangoes (or any sweet type).
Sweetener- 2-3 tablespoons of sugar/ sweetener of your choice depending on how sweet you want the popcorn to be.
Add approximately 1/4 teaspoon of cardamom powder
A pinch of saffron strands are also added although this is optional.
amount of milk or water from ¼ cup for thinning the batter
Several chopped nuts (there are for garnish only though if preferred)

1. Preparing the Mangoes: To begin with, it is essential to rinse the mangoes properly. Remove the skin off the mangoes and chop them into tiny pieces leaving behind the seed pulp.
2. Blending the Mangoes: Put the mango in a blender next. Put sugar, cardamom powder and if desired saffron should be added at this juncture. Mix until you have a smooth and smoothie like consistency of pulp. You can also add a little of milk or water depending on the sie of the paste you want to get. The consistency of Aamras should be thick enough, yet fluid like it can be poured easily.
3. Adjusting Sweetness and Consistency: Sip the aamras and if it is still too sour add more sugar to the quenelles. Stir once more to make sure the sugar has fully dissolved in the orange juice. If the mixture becomes too thick, add more milk or water and continue blending until it achieves the right thickness.
4. Serving the Aamras: Place the aamras to a serving dish. Pour the aamras into a serving bowl. Before serving it, you can refrigerate it for about an hour or so to make it cooler, in cases where you want a chilled experience. This dish can be served with chopped nuts on the top if wanted.
